Indian Vegetable Korma

Ingredients
  • 2 Tbsp Garam Masala spice blend
  • 1 Tbsp Turmeric
  • 1 tsp Cayenne
  • 2 Tbsp oil
  • 1″ piece ginger, minced
  • 4 cloves garlic, minced
  • 1 onion, finely diced
  • 2 potatoes
  • 1 head cauliflower or broccoli (or mixture)
  • 1 carrot
  • 1 red bell pepper
  • 1/2 cup cashews
  • 1 can coconut milk
  • 1/4 cup cilantro, chopped
  • salt and pepper to taste.
Instructions
  1. Heat oil in a large pan over medium heat.
  2. Add the ginger, garlic, onion, Garam Masala, Turmeric, and Cayenne and stir until fragrant, about 5 minutes.
  3. Add the potatoes and cook for 5 minutes, stirring occasionally.
  4. Blend the cashews and 1/2 cup water together.
  5. Add the cashew mixture, coconut milk, cauliflower, broccoli, carrot, and red bell pepper to the mixture. Let simmer for 10 minutes, or until potatoes are soft.
  6. Top with cilantro. Add salt and pepper to taste.
