Tunisian Shakshuka

Ingredients
  • Berbere Spice Blend:
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander seeds
  • 1 tsp fenugreek seeds
  • 1 dried chili
  • Main Dish:
  • 3 Tbsp olive oil
  • 4 garlic cloves, finely diced
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 4 medium tomatoes, diced
  • 1/2 cup water
  • 4 eggs
  • 1/4 cup feta
  • salt and pepper to taste
Instructions
  1. Roast spices for 5 minutes over low heat and blend together to create Berbere spice blend.
  2. Add oil to hot pan and saute garlic and onions until translucent.
  3. Add the red pepper and yellow pepper and cook for 3-4 minutes.
  4. Add tomatoes and water. Let simmer for 5 minutes.
  5. Crack the eggs over the mixture and cover for 5 minutes.
  6. Top with feta. Add salt and pepper to taste.
